CHEMICAL NAME: 3-O-ETHYL ASCORBIC ACID
It shares a similar molecular structure to pure vitamin C (ascorbic acid), but ethylated ascorbic acid incorporates an additional carbon chain that blocks the most reactive region of the molecule. This carries the advantage that ethylated ascorbic acid does not face the stability challenges associated with pure vitamin C. The extra chain exerts a protective effect against oxidation and darkening, preventing the transformation into yellow tones. However, the molecule retains much of the antioxidant power characteristic of ascorbic acid.
